A delightful side dish of roasted carrots sweetened with maple syrup and tangy Dijon mustard.

Ingredients

Scale
  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for roasting your carrots.
  2. Combine the maple syrup, Dijon mustard, olive oil, salt, and pepper in a large bowl, whisking to infuse the carrots with a delightful glaze.
  3. Add the carrot sticks to the bowl and toss them well to coat evenly in the sweet and tangy mixture.
  4. Spread the carrot sticks in a single layer on a baking sheet for perfect caramelization.
  5. Place the baking sheet in the preheated oven and roast the carrots for 20-25 minutes, stirring halfway for even roasting.
  6. Remove the carrots from the oven, and if desired, garnish with fresh herbs before serving.

Notes

These carrots can be paired beautifully with roasted chicken or pork, and make a great side for quinoa or salads.
