Instructions

  1. Begin by preheating your oven to 425°F (220°C). While that’s warming up, wash your fresh carrots and trim the tops. Peel them if you prefer a smoother texture, or keep the skins on for added rustic charm and nutrition. Cut them into even sticks—this ensures they cook uniformly.
  2. In a large bowl, toss the carrot sticks with olive oil, maple syrup, salt, and ground black pepper. Make sure each carrot is well-coated, as this mixture will enhance their natural sweetness and give them a glorious glaze once roasted.
  3. Spread the carrots in a single layer on a baking sheet lined with parchment paper (for easy cleanup) and roast in the preheated oven for 25 minutes.
