Ingredients

  • 1 cup cooked quinoa
  • 4 oz cooked salmon
  • 1/2 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 cup spinach or mixed greens
  • 1/4 cup cucumber, sliced
  • 2 tablespoons tahini or dressing of choice
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa according to package instructions. Allow it to cool completely.
  2. Create the base by layering the cooked quinoa in a bowl.
  3. Add the cooked salmon, sliced avocado, halved cherry tomatoes, fresh spinach, and cucumber on top.
  4. Drizzle tahini or your favorite dressing generously over the top.
  5. Sprinkle salt and pepper to taste.
  6. Serve immediately and enjoy!

Notes

Rinse quinoa before cooking to remove bitterness. Use different toppings as desired.
