Delicious salmon burgers paired with a spicy, refreshing Sriracha slaw, perfect for summer evenings.

Ingredients

  • 1 lb salmon fillets, skin removed
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cups shredded cabbage
  • 1 carrot, grated
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon apple cider vinegar
  • Salt to taste

Instructions

  1. Mash the salmon fillets in a bowl with a fork until broken down.
  2. Combine breadcrumbs, egg, mayonnaise, Dijon mustard, salt, and pepper until well mixed.
  3. Form the mixture into about 4 patties, each around 1 inch thick.
  4. Cook the burgers in a skillet with olive oil for 4-5 minutes per side, until golden brown.
  5. Prepare the slaw by mixing shredded cabbage, grated carrot, Sriracha, apple cider vinegar, and salt in a separate bowl.
  6. Serve the burgers topped with a generous scoop of Sriracha slaw.

Notes

For added heat, drizzle extra Sriracha on the burgers. Leftover patties can be refrigerated for up to 2 days.
