Delightful salmon kabobs marinated in zesty lemon and garlic, grilled to perfection with colorful veggies.

Ingredients

  • 1 lb Salmon fillets
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 Bell peppers, cut into chunks
  • 1 Red onion, cut into chunks
  • Skewers

Instructions

  1. Cut the salmon into bite-sized cubes. Toss these pieces into a bowl, adding a drizzle of olive oil, lemon juice, minced garlic, salt, and pepper. Let them marinate for about 30 minutes.
  2. Chop the bell peppers and red onion into chunky pieces to add color and crunch.
  3. Assemble the kabobs by threading the marinated salmon onto skewers, alternating with bell pepper and onion chunks.
  4. Preheat your grill to medium-high heat to prepare for cooking.
  5. Grill the kabobs for 8-10 minutes, turning occasionally until the salmon flakes easily and the veggies show grill marks.
  6. Serve and enjoy them hot, with your favorite dipping sauce.

Notes

For even seasoning, ensure the salmon is evenly coated in the marinade. Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
