Ingredients

  • 2 cups sauerkraut, drained
  • 1 lb ground beef or pork
  • 1 onion, chopped
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can diced tomatoes
  • 1 tsp caraway seeds
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the onion in olive oil or butter until translucent.
  3. Brown the meat in the skillet until cooked through.
  4. Combine cooked rice, drained sauerkraut, meat mixture, tomatoes, caraway seeds, salt, and pepper in a large bowl.
  5. Transfer the mixture into a greased casserole dish.
  6. Top with shredded cheese.
  7. Bake for 30-35 minutes until cheese is melted and bubbly.
  8. Rest for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Casserole can be frozen before baking.
