  • 2 medium butternut squashes
  • 1 pound sausage (Italian or your choice)
  • 1 cup cooked quinoa or rice
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup spinach or kale, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Olive oil
  • Parmesan cheese (optional for topping)

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the butternut squashes in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper. Roast in the oven for about 30-40 minutes until tender.
  2. In a skillet, heat some olive oil over medium heat. Add the onion and garlic, cooking until softened and fragrant.
  3. Add the sausage to the skillet, breaking it apart as it cooks until browned. Stir in the cooked quinoa or rice, spinach or kale, thyme, rosemary, and adjust seasoning with salt and pepper.
  4. Once the butternut squashes are roasted, remove them from the oven and fill each half with the sausage mixture.
  5. If desired, sprinkle with Parmesan cheese. Return to the oven for an additional 10-15 minutes until heated through and golden.
  6. Serve warm and enjoy your hearty, seasonal dish!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. This dish also freezes well, just wrap tightly and store for up to 2 months.
