  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 package (9 oz) cheese tortellini
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 3 to 5 minutes.
  3. Stir in the minced garlic and Italian sausage, cooking until browned, roughly 5 to 7 minutes.
  4. Pour in the chicken broth and diced tomatoes, bringing to a gentle simmer for about 5 minutes.
  5. Stir in the cheese tortellini and cook according to package instructions, 3 to 5 minutes.
  6. Add the fresh spinach, cooking just until wilted, about 1 minute.
