  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup green onions, chopped
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced (for sauce)
  • 1 tablespoon ginger, minced (for sauce)
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon rice vinegar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground beef, panko breadcrumbs, egg, garlic, ginger, and green onions in a large bowl.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  4. Bake for 20-25 minutes or until golden brown and cooked through.
  5. Prepare the Korean BBQ sauce by combining soy sauce, brown sugar, sesame oil, garlic, and ginger in a saucepan over medium heat.
  6. Toss the meatballs in the warm BBQ sauce until well-coated.
  7. Mix together mayonnaise, sriracha, and rice vinegar in a small bowl for the spicy mayo dip.
  8. Serve the meatballs hot with the spicy mayo dip on the side.

Notes

These meatballs can be paired with steamed rice or pickled vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days.
