A delicious one-pan meal featuring ground turkey and sweet potatoes, ready in just 30 minutes.

Ingredients

Scale
  • 1 pound ground turkey
  • 2 medium-sized sweet potatoes, peeled and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sautéing sweet potatoes: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once the oil is hot, toss in the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until they are tender and lightly golden. Remove cooked sweet potatoes from the skillet and set aside.
  2. Aromatic onions and garlic: In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion and minced garlic for 2-3 minutes, until fragrant.
  3. Browning the turkey: Add the ground turkey. Cook it, breaking it up with a wooden spoon until browned and cooked through, about 7-8 minutes. Season with cumin, paprika, salt, and pepper.
  4. Bringing it all together: Return the cooked sweet potatoes to the skillet. Stir everything together until well combined. If adding optional extras like bell peppers, spinach, or black beans, fold them in now. Cook for an additional 2-3 minutes.
  5. Serving your masterpiece: Remove from heat, garnish with fresh parsley, and serve hot.
