  • 1 (3-4 lb) chuck roast
  • 2 tablespoons olive oil
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Heat the olive oil in a large oven-safe pot over medium-high heat.
  3. Season the chuck roast generously with salt and pepper, then sear it on all sides.
  4. Set the roast aside once browned.
  5. Sauté the chopped onion and minced garlic until softened.
  6. Add the chopped carrots and diced potatoes, stirring to coat.
  7. Combine the seared roast with the vegetables, pouring beef broth over it, and sprinkle with dried thyme.
  8. Cover the pot and transfer it to the oven.
  9. Slow Cook for about 3-4 hours until fork-tender.
  10. Let it rest for a few minutes before serving.
