200g pitted dates, chopped
1 cup water
1 teaspoon baking soda
1 cup all-purpose flour
1 teaspoon baking powder
1/2 cup brown sugar
1/2 cup granulated sugar
1/4 cup unsalted butter, softened
1 large egg
1 tablespoon vanilla extract
1 cup brown sugar (for sauce)
1 cup water (for sauce)
1 tablespoon vanilla extract (for sauce)
Instructions
Preheat your oven to 180°C (350°F) and grease a baking dish.
Combine chopped dates and 1 cup of water in a saucepan. Bring to a boil, then remove from heat and stir in the baking soda.
Mix together the flour and baking powder in a bowl.
Cream together brown sugar, granulated sugar, and softened butter until light and fluffy.
Add the egg and vanilla extract to the sugar mixture, mixing until combined.
Combine the flour mixture and date mixture gradually.
Pour the batter into the greased baking dish.
Make the sauce by combining remaining brown sugar, 1 cup water, and 1 tablespoon vanilla extract in a saucepan. Bring to a boil and pour over the batter.
Bake for about 30-35 minutes, or until the top is set.
Serve warm with vanilla ice cream.
