  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 bell pepper, sliced
  • 2 cups broccoli florets
  • 1/2 cup cashews
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine chicken breast, bell pepper, broccoli, and cashews in a large bowl.
  3. Mix together soy sauce, olive oil, honey, garlic powder, ginger powder, salt, and pepper in a separate bowl.
  4. Pour the sauce over the chicken and vegetables, stirring to coat evenly.
  5. Spread the mixture on a sheet pan in a single layer.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Serve over cooked rice for a complete meal.

Notes

For a vegetarian version, substitute chicken with firm tofu. This dish can also be paired with jasmine rice or quinoa.
