  • 1 cup cashews
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine honey, soy sauce, olive oil, salt, and pepper in a large bowl, whisk until smooth.
  3. Add the chicken breasts to the bowl and toss to coat evenly with the glaze.
