A comforting dish of roasted chicken thighs with baby potatoes and green beans, perfect for busy weeknights.

Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed
  • 1 teaspoon dried thyme (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine chicken thighs, olive oil, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Arrange the seasoned chicken thighs on a sheet pan.
  4. Toss the baby potatoes and green beans with remaining olive oil, salt, and thyme.
  5. Spread the potatoes and green beans around the chicken on the sheet pan.
  6. Bake for 30-35 minutes or until the chicken is cooked through and vegetables are tender.
  7. Serve hot and enjoy!

Notes

Use skin-on chicken thighs for more flavor. Feel free to add other vegetables based on what you have.
