A delightful Mediterranean-inspired dish featuring juicy chicken breasts, cherry tomatoes, and Kalamata olives, all roasted together for an effortless meal.

  • 4 chicken breasts
  • 2 cups cherry tomatoes
  • 1 red onion, sliced
  • 1 bell pepper, sliced
  • 1 cup Kalamata olives
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Feta cheese for topping (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine olive oil, oregano, garlic powder, salt, and pepper in a large bowl.
  3. Add the chicken breasts to the bowl and coat well with the marinade.
  4. Spread out the cherry tomatoes, sliced red onion, bell pepper, and Kalamata olives on a sheet pan.
  5. Place the marinated chicken breasts on top of the vegetables.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and vegetables are tender.
  7. Sprinkle feta cheese on top if desired before serving.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

Marinate the chicken for an hour or two for better flavor. Feel free to add or substitute vegetables. Broil for crispy chicken skin at the end, but monitor to prevent burning.
