  • 8 large flour tortillas
  • 2 cups cooked shrimp, peeled and deveined
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen spinach, thawed and drained
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the garlic in olive oil over medium heat for about 1 minute.
  3. Add the cooked shrimp and heat for 2-3 minutes.
  4. Mix the shrimp, ricotta, half of the mozzarella, Parmesan, spinach, and Italian seasoning in a bowl. Season with salt and pepper.
  5. Lay a tortilla flat, and spread a spoonful of the shrimp mixture in the center.
  6. Roll up the tortilla tightly from the bottom to enclose the filling.
  7. Pour a layer of Alfredo sauce into a baking dish.
  8. Arrange the rolled tortillas seam-side down in the dish.
  9. Add the remaining Alfredo sauce on top and sprinkle with remaining mozzarella.
  10. Cover with aluminum foil and bake for 20 minutes.
  11. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden.
  12. Cool for a few minutes and garnish with fresh parsley before serving.

Notes

For a spicier option, consider adding red pepper flakes to the filling. You can use different proteins or vegetables based on your preference.
