A warm and comforting soup featuring sweet caramelized onions, tender noodles, and aromatic herbs that creates a cozy experience.

Ingredients

Scale
  • 3 large yellow onions (sweet for deep caramelized flavor)
  • 2 tablespoons butter (for caramelizing onions)
  • 1 tablespoon olive oil (to balance butter’s richness)
  • 2 cloves garlic (minced)
  • 6 cups vegetable or chicken broth (low-sodium)
  • 2 sprigs fresh thyme (for earthy aroma)
  • 1 bay leaf (for herbal note)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 8 ounces egg noodles (tender and slurp-worthy)
  • 1/4 cup fresh parsley (finely chopped)
  • 1/4 cup grated Parmesan cheese (optional topping)

Instructions

  1. Slice the onions into thin half moons.
  2. Caramelize the onions in a pot with butter and olive oil over medium heat for 15-20 minutes until golden brown.
  3. Enhance the flavor by adding minced garlic and sauté for an additional minute.
  4. Add the broth along with thyme sprigs and bay leaf, bringing the mixture to a gentle boil.
  5. Season the soup with salt and black pepper according to your preference.
  6. Cook the egg noodles in the pot according to package instructions, usually 6-8 minutes, until tender.
  7. Final touches, remove from heat, discard thyme and bay leaf, and stir in parsley.
  8. Serve the soup in bowls, garnishing with Parmesan cheese if desired.

Notes

This soup pairs well with a simple side salad or crusty bread. Store leftovers in the refrigerator for up to 4 days, or freeze for up to 3 months without noodles.
