A comforting and hearty pot roast made effortlessly in a slow cooker with flavorful seasoning packets and tender vegetables.

Ingredients

  • 3 to 4 lbs beef chuck roast
  • 1 envelope ranch dressing mix
  • 1 envelope onion soup mix
  • 1 envelope brown gravy mix
  • 4 cups water
  • 1 cup baby carrots (or chopped carrots)
  • 4 medium potatoes (cut into chunks)
  • Salt and pepper to taste

Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. Chop your potatoes into chunks and slice your carrots to ensure they cook evenly.
  3. Combine the ranch dressing mix, onion soup mix, and brown gravy mix in a bowl.
  4. Place the seasoned beef in your slow cooker and surround it with the potatoes and carrots.
  5. Pour the mixed seasonings over the roast and add the 4 cups of water.
  6. Cover the slow cooker with the lid and set it on low for 6 to 8 hours.
  7. Remove the roast from the slow cooker and let it rest for about 10 minutes before slicing.
  8. Plate the roast with the veggies and ladle some of the savory liquid over everything.

Notes

Trim excess fat from the beef for a less greasy pot roast. Feel free to add other vegetables during the last hour of cooking for extra flavor.
