A warm bowl of hearty butter beans swimming in a rich, herb-infused tomato broth for a comforting meal.

Ingredients

  • 2 cups Dry Butter Beans (soak overnight)
  • 1 can Canned Diced Tomatoes
  • 4 cups Vegetable Broth (low-sodium)
  • 2 sprigs Fresh Rosemary (crushed lightly)
  • 2 sprigs Fresh Thyme
  • 2 Bay Leaves (add whole)
  • 3 Tbsp Butter (cold, stir in at the end)
  • 3 cloves Garlic Cloves (minced)
  • 1 whole Onion (finely chopped)
  • To taste Salt & Black Pepper (adjust after cooking)
  • 1 tsp Red Pepper Flakes (optional)

Instructions

  1. Soak the beans overnight in plenty of water.
  2. Sauté garlic and onion in a sauté pan over medium heat until the onion is translucid and fragrant.
  3. Combine sautéed onion and garlic in your slow cooker with all other ingredients.
  4. Season with salt, black pepper, and red pepper flakes, then set the slow cooker to low for 6-8 hours.
  5. Finish with cold butter 10 minutes before serving.
  6. Adjust seasoning if necessary and serve warm.

Notes

Leftovers can be stored in an airtight container for up to 4 days. This dish tastes even better the next day.
