  • 1 loaf baguette
  • 4 large eggs
  • 4 ounces cream cheese
  • 4 ounces sharp cheddar cheese
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces smoked salmon
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped chives

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Slice the baguette into 1/2-inch rounds, brushing both sides lightly with olive oil.
  3. Bake the baguette slices for 8–10 minutes or until golden and crisp; set aside to cool.
  4. Place the eggs in a saucepan and cover them with cold water. Bring to a gentle boil, then cook for 10 minutes.
  5. Transfer the eggs to an ice bath, letting them cool completely, then peel and quarter them.
  6. Blend in a blender or food processor the peeled eggs, cream cheese, cheddar cheese, mayonnaise, lemon juice, salt, and pepper until smooth.
  7. Spoon the egg-cheddar mousse into a piping bag fitted with a star or round tip.
  8. Pipe or spread the mousse onto each cooled crostini.
  9. Top each mousse-covered crostini with a piece of smoked salmon and garnish with fresh dill and chives.
