A creamy cheesecake filled with flavors of melted chocolate and fluffy marshmallows, resting on a buttery graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup mini marshmallows
  • 1 cup chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup additional mini marshmallows for topping
  • Chocolate syrup for drizzle

Instructions

  1. Preheat the oven to 325°F (160°C). In a bowl, mix graham cracker crumbs with melted butter until combined. Press this mixture firmly into the bottom of a springform pan. Bake for 10 minutes to set the crust.
  2. Beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  3. Add the eggs, one at a time, to the cream cheese mixture, mixing well after each addition until everything is smooth.
  4. Stir in the mini marshmallows and chocolate chips gently so they spread throughout the cream cheese mixture. Pour this filling over the pre-baked crust.
  5. Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  6. Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours.
  7. Whip the heavy cream until stiff peaks form. Spread over the cheesecake and top with additional mini marshmallows and drizzle with chocolate syrup.

Notes

Store leftovers in the refrigerator for up to 5 days or freeze individual slices for 3 months.
