  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken thighs generously with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the chicken thighs skin side down until golden brown and crispy, about 6-8 minutes. Flip and cook for an additional 5-7 minutes. Remove from skillet and set aside.
  4. Sauté the chopped onion in the same skillet until translucent and lightly golden, about 4-5 minutes.
  5. Add the minced garlic and cook for another minute.
  6. Pour in the chicken broth, scraping the bottom of the skillet to deglaze.
  7. Return the chicken thighs to the skillet and let them simmer in the broth for about 10 minutes.
  8. Whisk together heavy cream and flour in a separate bowl until smooth, then stir into the skillet and cook until the gravy thickens, about 5 minutes.
  9. Garnish with freshly chopped parsley before serving.
