  • 2 cups vegetable broth or water
  • 1 can (15 oz) beans (such as black beans or pinto beans), drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil over medium heat in a large pan. Add the chopped onion and garlic, sautéing until translucent.
  2. Stir in the paprika, cumin, and oregano, cooking for another minute to bloom the spices.
  3. Add the rice to the pan, stirring to coat with oil and spices.
  4. Pour in the diced tomatoes and vegetable broth or water, bringing the mixture to a boil.
  5. Reduce the heat, cover, and let it simmer for about 15-18 minutes, or until the rice is cooked through.
  6. Fold in the rinsed beans and season with salt and pepper.
  7. Serve warm and enjoy with fresh cilantro or a squeeze of lime!

Notes

Rinse rice to remove excess starch for fluffiness. Adjust broth if rice looks dry.
