This Spicy Salmon Sushi Bake combines creamy, spicy salmon with fluffy sushi rice and is baked to perfection, making it a delightful comfort food.

Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1 lb salmon fillets
  • 1 tablespoon olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 teaspoon soy sauce
  • 2 green onions, chopped
  • Nori sheets for serving
  • Sesame seeds for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice until the water runs clear, then combine it with 2 1/2 cups of water in a rice cooker and cook according to manufacturer’s instructions.
  3. Season the salmon fillets with olive oil, salt, and pepper, then place them on a baking sheet and bake for about 15-20 minutes, or until cooked through and flaky.
  4. Mix together the mayonnaise, sriracha, and soy sauce in a bowl.
  5. Flake the cooked salmon into a large bowl, then add the steamed sushi rice, sriracha mayo, and chopped green onions, gently folding until well combined.
  6. Spread the mixture into a baking dish evenly and bake for another 10-15 minutes until the top is golden and slightly crunchy.
  7. Serve hot with nori sheets on the side and garnish with sesame seeds.

Notes

This dish can be prepared ahead of time and stored in the fridge until ready to bake. Adjust the spice level by varying the amount of sriracha.
