Deliciously flaky Spinach and Ricotta Rolls filled with creamy ricotta and vibrant spinach, perfect for any occasion.

  • 1 package puff pastry
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 egg, beaten
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 400°F (200°C) so it’s hot and ready to create that beautifully golden crust for your rolls.
  2. Roll out the puff pastry on a floured surface until it’s nice and thin. Cut the pastry into 4-inch squares.
  3. Mix in a mixing bowl the ricotta cheese, chopped spinach, beaten egg, grated Parmesan, and season with salt and pepper until well combined.
  4. Fill the center of each pastry square with a spoonful of the savory filling, leaving space around the edges.
  5. Enclose the filling by folding the pastry over and pressing the edges together firmly to seal.
  6. Brush the tops of each roll lightly with olive oil.
  7. Bake on a baking sheet lined with parchment paper for 15-20 minutes, or until puffed and golden brown.
  8. Serve warm, enjoying them fresh out of the oven.

Serve with a crisp garden salad or marinara sauce for dipping.
