  • 1 lb ground chicken or turkey
  • 1 cup chopped spinach (fresh or thawed)
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 garlic cloves, minced
  • 1/2 tsp Italian seasoning
  • 4 oz mozzarella, cubed
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Mix the ground chicken or turkey, chopped spinach, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper in a large bowl until fully incorporated.
  3. Scoop out portions of the meat mixture and flatten slightly. Place a cube of mozzarella in the center and roll it into a ball, sealing the cheese inside.
  4. Arrange the stuffed meatballs on the prepared baking sheet and bake for 18-20 minutes until cooked through and golden-brown.
  5. Remove the meatballs from the oven and serve hot, with marinara sauce over pasta or as an appetizer.
