Ingredients

  • 1/2 cup fresh spinach
  • 1/2 cup mushrooms
  • 1/4 cup onion
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Whisk the eggs in a bowl and season with salt and pepper until well combined and slightly frothy.
  2. Heat olive oil or butter in a pan over medium heat.
  3. Sauté chopped onions and mushrooms in the pan until softened and fragrant, about 4-5 minutes.
  4. Wilt the fresh spinach and cook until it wilts, about 1-2 minutes.
  5. Pour the beaten eggs over the sautéed vegetables, spreading them evenly.
  6. Cook until the eggs are set, about 3-4 minutes, then carefully fold the omelet in half.

Notes
