A comforting dish of fluffy rice enveloped in a rich and creamy sauce with mushrooms and fresh spinach.

  • 1 cup Long-grain rice (use white or brown rice)
  • 2 cups Vegetable broth (for cooking the rice)
  • 2 tablespoons Olive oil (for sautéing)
  • 1 cup Heavy cream (or coconut milk)
  • 1/2 cup Parmesan cheese (grated)
  • 2 cloves Garlic (minced)
  • 2 cups Fresh spinach (washed)
  • 1 cup Mushrooms (sliced)
  • 1 medium Onion (finely chopped)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Fresh thyme or parsley (for garnish)

Instructions

  1. Prepare the rice base: In a medium pot, bring the vegetable broth to a boil. Stir in the long-grain rice, reduce the heat to low, cover, and let it simmer for about 15-18 minutes until the rice is tender and has absorbed all the liquid. Once cooked, fluff the rice with a fork and set it aside.
  2. Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent and fragrant, about 3-4 minutes. Now, toss in the sliced mushrooms, cooking until they’re tender and golden brown, which should take around 5 minutes.
  3. Stir in the spinach: Add the washed spinach to the skillet, stirring until it wilts. This should only take about 2-3 minutes.
  4. Create the creamy sauce: Pour in the heavy cream (or coconut milk) and sprinkle in the parmesan cheese. Add the salt and black pepper, stirring gently to combine. Allow the mixture to simmer for another 2-3 minutes until the sauce thickens slightly.
  5. Combine and serve: Gently fold the cooked rice into the creamy vegetable mixture, ensuring each grain is coated in that rich sauce. Once everything is well mixed, taste and adjust the seasoning if needed. To serve, spoon generous portions onto plates and garnish with fresh thyme or parsley for a beautiful finish.

Notes

Use day-old rice for better texture. Don’t skimp on sautéing the mushrooms for enhanced flavor.
