Ingredients

  • 2 cups dried split peas
  • 8 cups vegetable broth or water
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: diced ham or bacon for additional flavor

Instructions

  1. Rinse the dried split peas under cold water until the water runs clear.
  2. Combine the rinsed split peas, vegetable broth, chopped onion, carrots, celery, minced garlic, and bay leaf in a large pot.
  3. Bring the mixture to a boil over medium-high heat.
  4. Simmer for about 1 hour, or until the peas are tender.
  5. Add the diced ham or bacon if using, and let bubble for an additional 10 minutes.
  6. Blend the soup to your desired consistency, removing the bay leaf first.
  7. Season with salt and pepper and serve warm.

Notes
