Delightful blondies bursting with pastel sprinkles and a hint of zesty lemon, perfect for celebrating spring.

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup pastel spring sprinkles
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a bowl until combined.
  3. Combine the cooled melted butter, granulated sugar, and brown sugar in a separate bowl until smooth.
  4. Add the eggs one at a time, whisking after each until fully incorporated, then stir in the vanilla extract and lemon zest.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Add pastel spring sprinkles and white chocolate chips.
  7. Pour the batter into the prepared pan, smoothing the top with a spatula, then sprinkle extra sprinkles on top.
  8. Bake for 18 to 22 minutes or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool completely in the pan before lifting out and cutting into squares.
