  • 4 cups Rice Krispies cereal (Standard size, not instant.)
  • 10 oz marshmallows (mini or standard)
  • 4 tablespoons unsalted butter (Can use a vegan alternative.)
  • 1 cup fresh strawberries, sliced (Be careful when folding in.)
  • ¼ cup strawberry puree (Blend fresh strawberries until smooth if not using store-bought.)
  • 1 teaspoon vanilla extract

Instructions

  1. Melt the butter and marshmallows in a large saucepan over low heat, stirring until smooth.
  2. Remove from heat and add vanilla extract and strawberry puree, mixing well.
  3. Gradually add the Rice Krispies, stirring gently to coat.
  4. Fold in the sliced strawberries carefully to maintain their structure.
  5. Lightly grease a 9×13 inch baking dish or line it with parchment paper. Transfer the mixture and press down.
  6. Allow to cool for at least 30 minutes at room temperature.
  7. Slice into squares once cool, and serve.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days. For vegan options, use vegan marshmallows and butter.
