A classic dish filled with ground beef, rice, and spices, baked in vibrant bell peppers.

Ingredients

  • 1 cup cooked rice
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large bell peppers
  • 2 tablespoons olive oil
  • 1/2 cup beef broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. Heat the olive oil in a skillet over medium heat and cook the diced onion for about 3-4 minutes.
  4. Add the minced garlic and cook for 1 minute.
  5. Cook the ground beef, breaking it apart, until browned, about 7-8 minutes.
  6. Return the skillet to heat and stir in the rice, tomato sauce, beef broth, oregano, basil, salt, and black pepper.
  7. Remove from heat and let the filling cool slightly.
  8. Spoon the mixture into the bell peppers, packing it gently.
  9. Place the stuffed peppers in a baking dish and top with cheddar cheese.
  10. Cover with foil and bake for 25-30 minutes.
  11. Remove the foil and bake for an additional 10-15 minutes.
  12. Let cool for a few minutes before serving.

Notes

For additional flavor, add fresh herbs to the filling. Substitute ground turkey for a lighter option.
