  • 1 butternut squash
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 1 cup cooked quinoa
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, then season generously with salt and pepper. Place cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  2. Cook the turkey bacon in a skillet over medium heat until crispy. Remove from the skillet and crumble it into pieces. In the same skillet, add the fresh spinach and sauté until wilted.
  3. Combine the crumbled turkey bacon, wilted spinach, cooked quinoa, and half of the shredded cheese in a bowl. Season with salt and pepper.
  4. Fill each half of the roasted squash with the turkey bacon and spinach mixture. Top with the remaining cheese.
  5. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  6. Serve warm and enjoy your healthy, delicious dinner!

Notes

Microwave the whole butternut squash for easier cutting. You can substitute regular bacon or smoked sausage and make it vegetarian by omitting the turkey bacon.
