  • 1 cup sweet chili sauce
  • 2 cups cooked brown rice or quinoa
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 can (14 oz) coconut milk
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken breast in sweet chili sauce for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat for 6-7 minutes per side until fully cooked.
  3. Steam the broccoli until bright green and tender, and sauté the sliced bell peppers until tender and slightly charred.
