  • 1 lb chicken breast, cubed
  • 1 cup sweet chili sauce
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • 1 cup cooked rice or quinoa
  • 1/2 cup coconut milk
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the cubed chicken over medium heat in a large pan until browned and cooked through, about 7–10 minutes. Make sure it’s nicely golden!
  2. Pour in the sweet chili sauce and let it simmer for 5 minutes, allowing the chicken to absorb all that delicious flavor.
  3. Steam or sauté the mixed vegetables until they are tender and vibrant.
  4. Mix the coconut milk and lime juice in a small bowl.
  5. Layer the rice or quinoa in a bowl, add the chicken and vegetables, and drizzle with the coconut lime sauce.
  6. Garnish with fresh cilantro and season with salt and pepper to taste.

Notes

For extra sauce, feel free to double the sweet chili sauce. Substitute chicken thighs for a juicier bite.
