  • 2 large sweet potatoes
  • 1 pound ground beef (or ground turkey)
  • 1 cup cooked rice (or quinoa for a gluten-free option)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional toppings: green onions, avocado, or hot sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the sweet potatoes in half lengthwise and place them face up on a baking sheet.
  3. Roast them in the oven for about 25-30 minutes, or until fork-tender.
  4. Heat the olive oil over medium heat in a skillet.
  5. Add the ground beef (or turkey) to the skillet and cook until browned.
  6. Season the meat with garlic powder, onion powder, salt, and pepper; stir to combine.
  7. Scoop out some flesh from the sweet potatoes after roasting.
  8. Spoon the browned meat mixture into the sweet potato halves.
  9. Top with cooked rice or quinoa.
  10. Add any optional toppings of your choice and serve warm.

Notes

Store leftover bowls in an airtight container for up to 3 days. Reheat in the microwave as needed.
