  • 2 large sweet potatoes
  • 1 pound ground turkey
  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Toppings of your choice (sour cream, green onions, avocado, etc.)

Instructions

  1. Preheat your oven to 400°F (200°C). Using a fork, poke several holes into each sweet potato.
  2. Place the sweet potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes.
  3. In a skillet over medium heat, add the ground turkey. Season with chili powder, cumin, salt, and pepper. Cook for about 7-10 minutes.
  4. Stir in the rinsed black beans, heating through for an additional 2-3 minutes.
  5. Once the sweet potatoes are cooked, carefully slice them in half lengthwise and scoop out a little of the flesh.
  6. Fill each sweet potato half with the turkey and black bean mixture. Top generously with shredded cheese.
  7. Return the stuffed sweet potatoes to the oven for another 10 minutes.
  8. Remove from the oven and allow to cool slightly before serving hot. Add your favorite toppings.
