Delicious sweet potato halves filled with a savory mixture of ground turkey and black beans, topped with melted cheese, making for a nutritious and comforting meal.

  • 4 Sweet potatoes
  • 1 lb Ground turkey
  • 1 can Black beans
  • 1 cup Cheese (your choice)
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • Spices (cumin, paprika, or taco seasoning)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake them for about 45 minutes or until tender.
  3. Heat olive oil in a skillet over medium heat and add ground turkey.
  4. Cook until browned and juices are developed.
  5. Stir in black beans and your choice of spices, cooking until heated through.
  6. Cut the sweet potatoes in half lengthwise and scoop out some flesh for filling.
  7. Fill each sweet potato half with the turkey and black bean mixture.
  8. Top with cheese and return to the oven for an additional 10 minutes, or until melted and bubbly.
  9. Serve hot and enjoy!
