  • 1 tsp Olive Oil
  • 1 1/2 cups Cottage Cheese (blended smooth)
  • 4 Large Eggs
  • 1/2 cup Milk
  • 10 oz Frozen Spinach (thawed and wrung bone dry)
  • 1 cup Shredded Cheddar Cheese
  • 1 tsp Garlic Powder

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a pie dish generously, layer the sweet potato rounds, and brush with olive oil. Bake for 15–20 minutes.
  2. Blend together cottage cheese, eggs, milk, garlic powder, and cheddar cheese until combined and frothy.
  3. Combine the thawed spinach into the egg batter carefully, ensuring it’s evenly distributed.
  4. Pour the filling over the crust and bake for 35–40 minutes, or until set and slightly golden.
