  • 4 large potatoes
  • 1 cup cooked ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and pierce each potato with a fork.
  2. Place your pierced potatoes directly on the oven rack and bake for about 45 minutes.
  3. While the potatoes are baking, combine the cooked ground meat, black beans, corn, salsa, taco seasoning, and season with salt and pepper in a skillet.
  4. Once your potatoes are done, carefully slice them open from top to bottom and fluff the insides gently with a fork.
  5. Spoon generous portions of your taco mixture into each potato.
  6. Top each taco potato with shredded cheese, diced avocado, and a dollop of sour cream.
