Hearty baked potatoes filled with a zesty taco mixture, perfect for family dinners.

Ingredients

  • 4 large potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork and bake for 45-60 minutes.
  3. Brown the ground beef or turkey in a skillet over medium heat.
  4. Stir in the taco seasoning and a little water as directed on the packet.
  5. Add the drained black beans and corn, then cook until heated through.
  6. Remove the potatoes from the oven, cut them open and fluff the insides.
  7. Top each potato with the meat mixture, shredded cheese, a dollop of sour cream, and chopped green onions.
  8. Serve hot and enjoy!
