A delightful medley of ground meat, beans, and cheese, perfect for busy weeknight dinners.

Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, for guacamole
  • Fresh cilantro, chopped
  • Salt and pepper to taste
  • Taco seasoning (optional)

Instructions

  1. Brown the Meat: In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. If there’s excess fat, make sure to drain it.
  2. Mix in the Veggies: Add the black beans, corn, and taco seasoning (if using) to the skillet. Stir everything to combine and cook for another 5 minutes.
  3. Melt the Cheese: Sprinkle the shredded cheese generously on top. Cover the skillet until the cheese is melted and bubbly.
  4. Prepare the Guacamole: Mash the avocado in a separate bowl with a fork and season it lightly with salt and pepper.
  5. Serve and Enjoy!: Once the cheese has fully melted, remove from heat and top with guacamole and fresh cilantro.

Notes

For a vegetarian version, swap out the meat for lentils or a plant-based meat substitute. Add diced jalapeños for heat.
