1 lb ground beef or turkey
1 can black beans, drained and rinsed
1 cup corn, frozen or canned
1 cup shredded cheese (cheddar or Mexican blend)
1 avocado, for guacamole
Fresh cilantro, chopped
Salt and pepper to taste
Taco seasoning (optional)
Instructions
Brown the Meat: In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. If there’s excess fat, make sure to drain it.
Mix in the Veggies: Add the black beans, corn, and taco seasoning (if using) to the skillet. Stir everything to combine and cook for another 5 minutes.
Melt the Cheese: Sprinkle the shredded cheese generously on top. Cover the skillet until the cheese is melted and bubbly.
Prepare the Guacamole: Mash the avocado in a separate bowl with a fork and season it lightly with salt and pepper.
Serve and Enjoy!: Once the cheese has fully melted, remove from heat and top with guacamole and fresh cilantro.
Notes
For a vegetarian version, swap out the meat for lentils or a plant-based meat substitute. Add diced jalapeños for heat.
