A vibrant and flavorful dish combining chicken, vegetables, and rice, coated in sweet and savory teriyaki sauce, perfect for busy weeknights or gatherings.

Ingredients

Scale
  • 1 lb chicken breast, diced
  • 2 cups cooked rice
  • 2 tablespoons teriyaki sauce
  • 2 eggs, beaten
  • 1 cup mixed vegetables (e.g., peas, carrots, corn)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes, stirring occasionally to ensure even cooking.
  3. Push the chicken to one side of the pan. Pour in the beaten eggs on the other side, scrambling them until fully cooked, for about 2-3 minutes.
  4. Stir in the mixed vegetables, allowing them to heat through and mix with the eggs and chicken.
  5. Fold in the cooked rice, ensuring everything is blended well and heated through.
  6. Pour teriyaki sauce over the mixture and stir to coat everything evenly.
  7. Season with salt and pepper to taste, stirring to combine.
  8. Cook for a few more minutes until everything is heated through, then garnish with sliced green onions before serving.

Notes

Use cold, day-old rice for better texture. For a vegetarian version, substitute chicken with tofu or additional vegetables.
