  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 1 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup barbecue sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Sear the chicken in a skillet over medium heat for about 5-6 minutes on each side.
  4. Set the chicken aside once browned.
  5. Sauté the diced onion, bell pepper, and minced garlic until softened.
  6. Combine the chicken broth and barbecue sauce in the skillet.
  7. Reintroduce the chicken, coating it with the sauce.
  8. Add shredded cheese on top and transfer to the oven.
  9. Bake for 20-25 minutes until chicken is cooked through.
  10. Garnish with fresh parsley before serving.
