A guilt-free take on classic tiramisu, this Tiramisu Chia Pudding layers creamy mascarpone and rich coffee flavors with nutritious chia seeds.

Ingredients

  • 3 tablespoons chia seeds
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup mascarpone cheese
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup strong brewed coffee, cooled
  • 1 tablespoon unsweetened cocoa powder
  • Pinch salt

Instructions

  1. Combine the chia seeds, milk, maple syrup, vanilla extract, and a pinch of salt in a bowl.
  2. Chill the mixture in the refrigerator for at least 2 hours until thick.
  3. Prepare the mascarpone cheese by whisking it until smooth, then fold in the cooled coffee.
  4. Layer half of the chia pudding in serving glasses, then add the creamy coffee-mascarpone mixture.
  5. Finish with the remaining chia pudding, creating layers.
  6. Dust the top with cocoa powder before serving.

Notes
