A creamy, nostalgic macaroni salad with fresh vegetables, perfect for summer gatherings.

Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup chopped celery
  • 1/2 cup grated carrots
  • 1/4 cup chopped onion
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Optional: 1/4 cup chopped green onions

Instructions

  1. Cook the elbow macaroni in boiling water until al dente, then drain and rinse under cold water.
  2. Combine the cooled macaroni with mayonnaise, celery, carrots, onion, and vinegar in a large bowl.
  3. Season the salad with salt and pepper to taste.
  4. Add optional chopped green onions for extra flavor and color.
  5. Chill the salad in the refrigerator for at least 1 hour to let flavors meld.

Notes

This salad pairs well with grilled meats and can be made a day in advance for better flavor.
