  • ½ cup unsweetened shredded coconut
  • ½ cup butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • ½ teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the sifted all-purpose flour, shredded coconut, and baking powder in a mixing bowl.
  3. Beat together the softened butter and brown sugar until light and fluffy.
  4. Crack in the eggs and mix well.
  5. Fold in the crushed pineapple and vanilla extract.
  6. Pour the flour mixture into the pineapple mixture, stirring until just combined.
  7. Spread the batter into a greased baking dish.
  8. Bake for about 25 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
