A warm and comforting turkey soup made from leftover turkey and vibrant vegetables.

  • 2 cups leftover turkey, shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups turkey or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups leafy greens (like spinach or kale)
  • 1 cup cooked noodles or rice (optional)

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery; cook until they soften and release their sweet aromas, about 5-7 minutes.
  2. Add garlic: Stir in the minced garlic and let it bloom in the heat for another minute until fragrant.
  3. Build the base: Pour in the turkey or chicken broth, and add the shredded turkey along with the dried thyme and rosemary; season with salt and pepper. Bring to a gentle simmer.
  4. Enrich the soup: If you’re feeling adventurous, toss in the cooked noodles or rice along with the leafy greens and simmer for an additional 10-15 minutes.
  5. Final adjustments: Taste your soup and adjust the seasoning as needed. Serve warm in bowls.

Notes

For extra flavor, roast the turkey bones before making the broth. Feel free to add leftover vegetables for extra nutrition.
