Delicious zucchini boats filled with ground turkey, rice, and topped with melted mozzarella cheese.

Ingredients

  • 4 medium zucchinis
  • 1 pound ground turkey
  • 1 cup cooked rice or quinoa
  • 1 cup diced tomatoes
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the centers to create little ‘boats.’
  3. In a skillet, cook the onions and garlic until softened.
  4. Add the ground turkey to the skillet and cook until browned.
  5. Stir in the cooked rice or quinoa, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Fill the zucchini boats with the turkey mixture generously.
  7. Place the filled zucchini boats in a baking dish and top with shredded mozzarella cheese.
  8. Bake for 25-30 minutes or until the zucchinis are tender and the cheese is bubbly.
